Granola Bars (RAW and Nut-Free with Vegan Option)

There is nothing better than a wholesome crunchy homemade granola bar. Being allergic to nuts, it is often very hard to find some good quality granola bars at the store. Most recipes either have nuts in them or may contain them. And so, making them from scratch was a natural decision for me. I have tried many different variations of this recipe, I love it because you can get so creative with your ingredients. Like, adding some cranberries and yogurt chips or some dried mangos  and apricots; the possibilities are endless. Beware, once you go homemade, you’ll never go back. Trust me.

Nut-Free Granola Bars

-2/3 cup sunflower seed butter
-2/3 cup raw honey or sirop d’érable*
-2/3 cup coconut oil
-1 tsp pure vanilla extract
-3/4 cup pumpkin seeds
-3/4 cup sunflower seeds
-1/4 cup hulled hemp hearts
-1/4 flax seeds
-2 heaping tbsp chia seeds
-1/4 cup pitted medjool dates or dried fruit of choice (chopped into small pieces)
-2 cups old fashioned oats
-1/4 shredded coconut
-1/2 cup mini chocolate chips

In a double boiler, combine the coconut oil, sunbutter, honey and vanilla. Let cool, for a few minutes. Add the seeds, dates, oats, coconut and chips. Mix well, spread and press into a lined container. Let harden in the fridge in a air tight container. Enjoy these crunchy delicious bars for breakfast, dessert or simply as an on the run energy booster. They’re also great for lunches.

Makes about a dozen bars!
