Banana Date Rum Cake
- 1/2 cup medjool dates
- 1/3 cup rum
- 4 ripe bananas (cut into large chunks)
- 3/4 cup sugar
- 1 tbsp pure vanilla
- 1/2 tsp salt
- 2 eggs (sub 6 tbsp chia seeds + 10 tbsp water)
- 1/2 cup melted butter (sub extra-virgin coconut oil)
- 1/2 lime (juice and zest)
- 1 1/4 cup millet flour
In a small bowl, cover the dates with rum and let soak for up to 5 hours or overnight.
Preheat oven at 350 degrees F. Line a cake pan with parchment paper. In a large bowl, mix all the wet ingredients (bananas, dates, rum, eggs, vanilla, lime, butter, sugar) then quickly stir in the dry. Bake in the oven for an hour and a half.
