Christmas cookie season is finally here and I couldn’t be happier. Cookies are both my best friend and my enemy during the holiday season, so why not try to make your treats as healthy as possible? These drops are absolutely irresistible, Enjoy. 🙂
Orange Poppy Seed Drop Cookies
- 3/4 cup vegetable shortening
- 1 cup granulated sugar cane
- 2 flax eggs (6 tbsp flax meal + 10 tbsp water)
- 1 tsp pure vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tbsp grated orange peel
- 2 tbsp freshly squeezed orange juice
- 1 tbsp poppy seeds
- 2 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 cup powdered sugar
- 2 to 3 tsp freshly squeezed orange juice
Preheat oven at 350 degrees F. Line a baking sheet with parchment paper. In a large bowl, beat together the shortening, flax eggs, sugar, orange juice and vanilla. Sift in the flour, baking powder and ginger. Add the orange peel and mix until well combined. Drop dough by heaping teaspoon 2 inches apart onto your baking sheet. Bake for 10-15 minutes, or until edges are golden brown.
In the meantime, prepare your frosting by mixing the powdered sugar and orange juice in a small bowl until there are no lumps. When cookies are cooled, top with a bit of the frosting and let dry completely before storing in an air tight container.
Yields about 30 cookies.
