Orange & White Bean Veggie Stir-Fry
- 3 bell peppers (sliced)
- 1 white onion (diced)
- 1 clove garlic (minced)
- 1 cup kale (chopped)
- 1 navel orange (peeled, sectioned and zested)
- 1 can white beans
- 3 tsp of your favourite curry spice blend (coriander, turmeric, fenugreek, cumin, cardamom, pepper, chilli, cinnamon, mustard seed, clove, nutmeg, bay, salt etc.)
- 2 tbsp sunflower oil
Cut up all your veggies and toss in a large frying pan with oil. Cook on medium heat until all the colours in the pan become very bright (7-8 minutes). Add the orange, zest, white beans and curry spice. Cook for another 5 minutes until flavours are well combined and beans are hot.
Serve alone or with rice.
Yields three servings.
