Green Noodle Bowl with Toasted Sesame Tahini Dressing (Vegan & Gluten-Free)

This delicious salad makes for a great lunch. 🙂 IMG_0740

Green Noodle Bowl

  • 1 cup cooked rice vermicelli (cold)
  • 1/4 green onions (chopped)
  • 1/4 cup cucumber (matchsticks)
  • 1/4 cup mushrooms (sliced)
  • 1/2 ripe avocado (sliced)

Toasted Sesame Tahini Dressing

  • 1/4 cup rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp olive oil
  • 1 tbsp tahini
  • 2 tbsp lime juice
  • 1/2 tsp chili flakes

Add cold noodles to a bowl, place veggies on top. Top it off with dressing.

Slurp away 😉

Yields one serving.
