Mushroom Gravy Goodness (Vegan & Gluten-Free)

This recipe is so easy and always a hit. Especially for when you have a craving for homemade poutines with curly fries. 😉

Mushroom Gravy Goodness

  • 2 tbsp vegetable oil
  • 1 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 3 cups mushrooms (diced)
  • 1/2 cup red wine
  • 1 1/2 cup vegetable broth
  • 3 tbsp fresh chives (chopped)
  • 2 heaping tbsp corn starch
  • Salt & Pepper to taste

In a medium sauce-pan heat the oil, onions and garlic for about 5 minutes. Add the wine and let simmer at medium-heat for about 10 minutes. Stir in the mushrooms and chives, mix for 3 minutes. Add the corn starch, mix until mushrooms are coated. Pour in the vegetable broth and reduce to medium-low heat. Let simmer for another 15 minutes, stirring often.

Serve hot over fries (curly or plain), mashed potatoes, cauliflower rice and all other gravy dishes.

Yields four large servings.
