Sriracha Lime BBQ’d Veggies (Vegan & Gluten-Free)

Sriracha Lime BBQ’d Veggies

  • 3 medium potatoes (sliced lengthwise)
  • 1 medium zucchini (sliced lengthwise)
  • 1 large yellow onion (cut in half)
  • 3 tbsp sriracha sauce
  • 5 tbsp freshly squeezed lime juice
  • 2 large garlic cloves (diced)
  • 1 tbsp Montreal steak spice
  • 2 tbsp olive oil

In a large bowl, toss the veggies in the oil and steak spice. Heat the BBQ to medium-low heat and start cooking the potatoes and onion, flipping occasionally. Meanwhile, mix the sriracha, lime and garlic in a small bowl. Once the potatoes look like they’re almost roasted, add the zucchini to the grill. Brush all the veggies with the sriracha, lime and garlic sauce and grill for another 10-15 minutes.
