Apple Oatmeal Squares with Caramel Sauce
- 3/4 cup sunflower seed butter
- 1/4 cup coconut butter (I used Earth Balance)
- 1 ripe banana (mashed)
- 2 cups gluten-free oats
- 1/2 cup raw sugar
- 1 tsp pure vanilla extract
- 2 tbsp lemon juice
- 1 tsp cinnamon
- 2 crisp apples (chopped)
In a large bowl, mix the coconut butter, sugar, banana, vanilla, lemon juice and sunbutter. Add the dry ingredients and stir until combined, fold in the apples. Press into a greased brownie dish, bake at 350 degrees F for 30-40 minutes or until golden brown and firm.
- 4 tbsp brown sugar
- 1 tbsp coconut butter
- 2 tbsp full-fat coconut cream
While the squares are cooking, mix all the sauce ingredients and whisk over low heat, until smooth and thickened (roughly 2 minutes.)
Serve warm with sauce drizzled on top. A scoop of vanilla ice cream is a great touch as well.
