Crunchy Kale Stir-Fry

I love making stir-fries on a busy day. This one was particularly delicious so I thought I’d share. 🙂

Crunchy Kale Stir-Fry

  • 2 cups kale (chopped)
  • 1/2 large red onion (diced)
  • 2 garlic cloves (minced)
  • 1 cup  water chestnuts (sliced)
  • 1 cup cauliflower (chopped)
  • 4 tbsp lime juice
  • 3 tbsp soy sauce ( sub. balsamic vinegar + 1 tbsp of salt for soy-free!)
  • 1 tbsp sriracha sauce
  • 4 tbsp olive oil
  • Salt & Pepper to taste

In a large frying plan, add 2 tbsp of oil and set to medium-heat. Toss in the onions, garlic and cauliflower and fry until they look nice and golden (roughly 8 minutes.) Mix the lime juice, soy sauce (or substitute), sriracha and oil in a cup. Add the kale, water chestnuts and sauce mixture to the pan, fry for another 5 minutes or so. Once the kale becomes bright green, it’s ready. You want it to stay kinda crunchy, hence the name.

Yields 2 servings.
